Hi Friends! Day 2’s challenge for the Winter Biannual Bibliothon is to create a bookish beverage. Today’s challenge was created by Will Read For Booze. The idea is to create your own beverage inspired by a character or book. And I might be a little bit cliche in my beverage, but I couldn’t help myself—at all. So I made butterbeer. More specifically, I made a vegan butterbeer latte in Hermione’s name. I’d like to think that Hermione’s wild dabble in humanitarian battles with S.P.E.W. were not an isolated incident and that she’d be vegan if she’d never gone to Hogwarts.
Not to toot my own horn, but this latte turned out so much better than I thought it would! I’ve tried them before with dairy milk before I became vegan, and the real butter and dairy just never sat well in my stomach and it was all too much. But the creaminess of the vegan butter and the soymilk go perfectly together and the maple and espresso compliment each other so well—then you mix it all together and YUM! The taste is simply creamy and comforting with just a little bit of sweetness and bold coffee flavor. It’s like a warm hug in a mug—perfect for a lazy Sunday morning.
Ingredients|
• 1 double shot espresso*
• 1 cup unsweetened soy milk
• 2 tbsp vegan butter
• 2 tbsp maple syrup
• Pinch of cinnamon
*If you don’t have espresso, simply use 1/2 a mug of coffee and 1/2 of soy milk
Instructions|
1| Blend the espresso, butter, and maple syrup together using a NutriBullet or something similar. It’s important to blend and not stir in order to get that creamy consistency with froth on top.
2| Steam the soymilk or heat on the stove—if heating on a stovetop stir often and be careful not to burn it, heating until the milk is just about to boil.
3| Pour the blended ingredients into a mug and add the soy milk on top
4|Top off with a pinch of cinnamon*
OPTIONAL| For an extra butterbeer-y feel, drink your latte out of a beer stein
